Airbrush Techniques & Kopykake Demo
Methods of transferring a pattern and airbrushing a rainbow trout, clouds, white-capped water, writing and doilies as stencils will be shown. 1 hour. $10

Lenice Lopez will demonstrate how to make fast and easy appetizers including cold ginger shrimp. chilled sugar snap peas stuffed with herbed cream cheese, kielbasa served with a sweet and spicy dip, non-fried spring rolls served with honey peanut sauce, soft cheddar cheese with orange marmalade and green onions served with crackers, and Chinese chicken wings with sesame seeds. Holiday Appetizers
Lenice Lopez will show how to make asparagus with prosciutto, sliced peppered beef served with a cream horseradish or herb butter, baked salmon spicy chicken empanadas, teriyaki chicken skewers, mozzarella cheese balls with artichokes and olives in a basil oregano dressing served on baguette bread. Lenice will demonstrate how to set up a table and display the food using fresh fruits with a cream cheese dip, colorful vegetables and dip, and multi-level props 3 hours. $40
 

Austrian Peach Cookies
Students will learn how to mix, bake, and assemble peach-shaped sugar cookies filled with "pits" of chocolate, mixed with jam, and ground nuts. Techniques for coating the cookies with two tones of sugar, and garnishing each with a spearmint leaf and cinnamon stem, will be covered. Each student will complete a small basket of peach cookies to take home. Gift presentation will be emphasized. All class materials will be supplied by the instructor. 3 hours. $40
 

Borders
This class will include reverse shell, spiral, heart shell, rope, ribbon, bulb, puff, and other borders. All frosting will be supplied by the instructor. 2 hours. $20
 
Brush Embroidery with Icing
Susan Carberry will teach how to make attractive designs to resemble embroidery using royal icing. Students will learn pattern making, transfer techniques, coloring methods, and complete a plaque to take home. All supplies will be provided by the instructor. 3 hours. $40
 
Buttercream Transfer Workshop
Students will decorate using an airbrush and the buttercream transfer method of reproducing a rabbit pattern onto their cakes.. Methods of filling in, sculpting and building icing, as well as alternatives to using the airbrush, and use of different textures in decorating will be covered. All icing will be supplied by the instructor. 3½ hours. $40
 
Cake Baking 101
Lenice Lopez will demonstrate the basics of how to make cakes from scratch including a genoise, vanilla butter cake, Black Forest and a flourless chocolate cake. Techniques of torting, filling and garnishing with glazes and fresh fruits will also be shown. 3 hours. $30
 
Cake Decorating for Beginners - A One Day Special
This workshop is a "no prerequisite, no follow-up" workshop designed for students who wish to learn the simplest basics of cake decorating in the shortest amount of time. Each student will work with buttercream icing to create scalloped latticework, drop flowers, leaves, borders, and more. Students will learn how to put a pattern on a cake. Each student will decorate a small cake to take home. Techniques on baking and frosting cakes will be covered. Professional food presentation will be emphasized as students learn to adapt their skills to whipped cream, mashed potatoes, and cream cheese. This is also a good brush-up class for decorators with previous experience. Recipes, tubes, bags, colors, icing, patterns and small cakes will be supplied by the instructor and are included in the lesson price. 3 hours. $40
 
Cake Decorating for Beginners
In this six week course, students will learn professional baking hints, how to evenly bake and level cakes, methods to smoothly frost a cake, borders, latticework, roses, drop flowers, leaves, color flow, sugar molding, daisies, holiday ideas, corneilli lace work, use of a template, figure piping of clowns, pricing cakes and much, much more! Professional food presentation is emphasized as students learn to adapt their skills to cream cheese, butter, chocolate, whipped cream and mashed potatoes. Frosting, cake "tastes", colors, patterns, and recipes are included in the lesson price. For the first lesson, all frosting, tips, bags, couplers, and other material will be provided by the instructor. 6 weeks. $70
 
Cake Decorating for Intermediates
In this six week course, students will learn wild roses, basket weaving, patchwork design cakes for any occasion, daffodils, primroses, pattern making, holiday ideas and figure piping of booties, rattles and safety pins. Most frosting and colors supplied by the instructor. 6 weeks. $70
 
Cake Decorating for the Advanced
In this four week course, students will learn the use of the airbrush, stencilling, oriental poppies, black-eyed Susans, iinterwoven latticework, and two toned cakes with garlands. Most frosting will be supplied by the instructor. 4 weeks. $50
 
Candy Making
Each student will make and take home over two pounds of candy including cherry cordials, chocolate strawberries, cameos, ghost and Santa lollipops, peanut butter cups, coconut bonbons, almond joys, rocky road, peanut butter bonbons, peanut clusters, peppermint patties, toasted coconut covered marshmallows, chocolate Christmas trees, and cream cheese mints in the shape of flowers, leaves, baby booties, hearts, fleur-de-lis, and stars. Recipes included. All class materials supplied by the instructor. 5 hours. $65
 
Cheesecakes
Lenice Lopez will demonstrate how to make a savory sun dried tomato cheesecake as well as Bavarian lemon, marble, New York, and white chocolate cheesecakes. Decorating with fruits and attractive presentation will be emphasized. 3 hours. $40
 
Chocolate Artistry: Flowers, Butterflies and Swans
Students will learn to pipe and assemble multi-layered chocolate flowers, swans, hearts, three dimensional filigree butterflies, and mushroom shaped meringues dusted with cocoa. Patterns, bags, boards, chocolate, and recipes will be supplied by the instructor. 3½ hours. $45
 
Cookie Bouquets
In this demonstration, students will learn how to mix, roll, cut, skewer, bake, decorate, assemble and arrange cookies into gifts and centerpieces for holidays, bridal and baby showers, sporting events and birthdays. Patterns for other occasions, cookie and icing recipes are included. 2 hours. $25
 
Cookie Construction
Students will create houses, trucks, baseball caps, treasure chests, and more, using icing and store-bought cookies supplied by the instructor. 3 hours. $30
 

Cookie Decorating for Spring                                                                                        
Students will use royal icing to decorate hearts, Easter eggs, and wedding cake shaped sugar cookies.  Techniques will include outlining, flooding, stenciling, single and double feathering, 3-D lattice cages, drop flowers and use of edible markers. Using rolled fondant as a base will be shown.  Students need to bring tubes #2, 3, 4, 16, bags, and a box for taking completed cookies home.  All cookies and icings are supplied by the instructor.  Cookie Bouquet or other previous cookie baking class required. Crème Brulee, Tiramisu, and Baklava 
Lenice Lopez will make traditional crème brulee, traditional tiramisu made with mascarpone cheese, Marsala wine and espresso, and rich, flaky baklava. Emphasis will be on presentation. 3 hours. $40
 

Cream Puffs, Eclairs & Napoleons
Lenice Lopez will demonstrate how to create Napoleons and mix, form, bake and fill cream puffs with crème patisserie, and ice cream. Each student will fill pastries and dip them in chocolate. Savory fillings including chicken, mushroom and crab will also be featured. 3 hours.  $45.
 

3-D Cupcake Animals
Students will cut, stack, and decorate 5” tall three-dimensional cupcake figures including an Easter rabbit, a graduation owl, and a whimsical lion. Amy will demonstrate a shaggy dog cake with a dog bone border. Adaptation to other animals and cartoon characters using marshmallows and larger cakes will be emphasized. Supply list sent upon enrollment. 31/2 hours. $35
 
Cupcake Creations
Students will create Cookie Monster, Big Bird, Raggedy Ann, baseballs, and baby bassinets using cupcakes and marshmallows. Students will also learn how to neatly frost a cupcake in 5 seconds. Beginners welcome. 2 hours. $25
 
Cupcakes for Fall
Students will learn to decorate cupcakes by figure piping witches, ghosts, spiders, pumpkins, santas, wreaths, bats, and Christmas trees. Students will also learn how to neatly frost a cupcake in 5 seconds. Adapting skills to decorate cookies, mints, and larger cakes will be covered. Thanksgiving turkey place cards made from cookies will be demonstrated. Beginners welcome. 3 hours. $35
 
Decadent Chocolate Desserts
Lenice Lopez will demonstrate how to fill truffles with ganache and then assemble them into a Christmas tree using chocolate decorated with gum paste poinsettias and holiday ribbon.  Students will learn how to make flavored ganache mini bombs glazed with dark chocolate and drizzled with red and green chocolate, topped with gold luster dust.   Lenice will also prepare dipped chocolate coffee cups filled with coffee ice cream. Learn how to make mini chocolate towers prepared with brownies, transfer sheets, raspberry jam, whipping cream and finished with a fresh raspberry or with holiday decorations. 3 ½ hours. $45
 
Fondant Easter Figures
Susan Carberry will teach students how to make, color and use fondant to create small chicks, bunnies, mushrooms, flowers, rocks, ponds, caterpillars and butterflies and artistically arrange them on a 6" cake top. All materials will be supplied by the instructor. Students need to bring a box to take their sample home. 3 hours. $55
 
French Desserts
Lenice Lopez will demonstrate step-by-step techniques in the successful creation of specialty desserts including individual hot chocolate soufflés served with crème anglaise, Napoleons, tarte tatin, and traditional, coconut, coffee and orange crème brulee. Attractive presentation will be emphasized. 3 hours. $40
 
Fruit Bouquets
Lenice Lopez will demonstrate how to make floral arrangements by cutting flowers from pineapples, kiwis, grapes, strawberries, boysenberries, raspberries, oranges, lemons, watermelons, honeydews and cantaloupes. Utilizing different size containers from coffee cups. 3 hours. $40
 
Fun Fall Foods & Garnishes Demonstration
In this demonstration, students will learn how to make meringue snowmen filled with chocolate mousse, citrus jack O’lanterns, gumdrop pumpkins, a cheese ball shaped and decorated as a pine cone with edible needles, piped meringue candy canes, and 3-D turkey place card holders made from store bought cookies.  A New Year’s cake decorated with champagne glasses filled with piped buttercream pink elephants will also be shown. $30
 
Fun Fondant Animals
Susan Carberry will teach students how to hand mold small, detailed animals including teddy bears, elephants, cows, pigs, and dogs. The instructor will supply all tools, colors, and fondant. Students need to bring a container for taking samples home. 3 hours. $55.
 
Garnishes I
Students will create apple birds, orange baskets, carrot spirals, cucumber chains, egg chickens, radish mushrooms, cucumber twigs, fluted mushrooms, and more. Butter roses will be demonstrated. 2 hours. $25
 
Garnishes II
Students will create cucumber whales, apple cups, citrus gelatin wedges, beet and turnip "candy" canes, carrot centipedes, squash geese, and turnip butterflies. Students need to bring a sharp paring knife, a small cutting board, two scraped carrots, two firm apples, and a container for storing completed samples. Garnish classes are independent of each other and may be taken in any order. 2 hours. $25
 
Garnishes for Spring
Students will create carved pear rabbits, orange and cherry butterflies, radish spinners, egg yolk chicks, carrot bundles, and bunny biscuits. Students need to bring a paring knife, two hard boiled eggs, and a container for storing samples. 2 hours. $25
 
Gingerbread House Workshop
In this two-part class, students will learn how to mix, bake, cut, assemble, and decorate a beautiful gingerbread house using royal icing and colorful candies including gumdrops, red hots, lifesavers, nuts, mints, starbursts, jelly beans, spearmint leaves, caramels, marshmallow toys, candy canes, and more. Detailed step-by-step demonstration and instruction provided in the first session; pieces baked at home will be assembled and decorated in the second session. Techniques for making icing icicles and ice cream cone Christmas trees will be covered. Recipes, instructions, and patterns for houses, Swiss chalets, sleighs, brownstones, and churches are included. 6 hours. $40.  First night only is $25.
 
Gum Paste Calla Lilies, Anthuriums and Daisies
Susan Carberry will teach students how to create life-like flowers out of gum paste. Students will learn how to make gum paste, cut and form flower petals and centers, coloring techniques and how to assemble various flowers. All supplies for class are provided by the instructor. Students need to bring a container to take home their samples. $60
 
Gum Paste Flower Workshop
Multi-trophy winner Susan Carberry will teach students how to make gumpaste, cut and form petals, wire and assemble a cake top or corsage. Students will make roses, filler flowers, leaves, and will complete a small arrangement to take home. All supplies will be supplied by the instructor. 6 hours. $85
 
Gum Paste Irises & Tulips
In this two-week workshop, Susan Carberry will teach how to create a lifelike tulip and iris using gum paste. Students will learn how to make gum paste, hand mold petals and leaves, color flowers using dusting powders, and assemble. All supplies provided by the instructor. Students need to bring a container to take home finished flowers on the second night of class. 6 hours. $85.
 
Gum Paste Orchids
In this one day workshop, Susan Carberry will teach students how to create a life-like orchid. Students will make the column, throat, sepal, and petals and will learn how to make gumpaste, various coloring techniques, and how to assemble the flower. All supplies are included. Students need to bring a container to take samples home. 3 hours. $50.
 
Hors d'oeuvres
Students will make cheese-filled phyllo triangles, Crab Remick dip, ham and cheese logs, and stuffed cherry tomatoes. Students will also fill deviled eggs using a pastry bag. Hints on advanced preparation and attractive presentation will be emphasized. 3 hours. $40
 

Ice Creams & Sorbets
James Foran will demonstrate the wonderful world of homemade ice cream and summer fruit sorbets including cheesecake ice cream with roasted strawberries, honeydew melon sorbet, and low-fat blackberry frozen yogurt. How to pick the right machine and store the finished product will be discussed. Hints for adapting these to other flavors will be included. 3 hours $50
 

Icing Flowers Workshop
This class includes half-mums, impatiens, apple blossoms, violets, pansies, forget-me-nots, rose buds, and half-roses. All frosting is supplied by the instructor. 4½ hours. $40
 
Incredible Edibles
In this demonstration, students will learn how to make cakes that look like pizzas, hamburgers, lemon meringue and chocolate cream pies, and Oreo cookies. 2 hours. $25
 
Marzipan Fruits and Animals
Students will create marzipan grapes, pumpkins, oranges, lemons, bananas, pears, strawberries, carrots, apples, baked potatoes, and mice. Using an airbrush to shade and enhance pieces will be demonstrated. Use of cupcake and ice cream cone cornucopias will be covered. All class materials will be supplied by the instructor. 3½ hours. $45.
 
Melon Sculpture
Students will create cantaloupe sea shells, steps and honeydew flowers and "grape" clusters. Handouts on designing, preserving, choosing the proper melons, fruit recipes, and patterns are included. A carved honeydew swan will be demonstrated. Students need to bring one honeydew and one cantaloupe, a sharp paring knife, and a container for leftover fruit. 3 hours. $35
 
Pie Making Made Simple
Lenice Lopez will demonstrate several techniques of successful pie making while creating a sour cream apple pie with an interwoven top crust, easy lemon meringue pie, a pecan pie with an orange pine nut chocolate crust and a pumpkin pie garnished with pie crust autumn leaves. Attractive presentation and gift ideas will be emphasized. 3 hours. $40
 
Piping Gel
Students will decorate their cakes using piping gel to transfer and fill in cartoon character designs including Kermit, Mickey Mouse and Winnie the Pooh. 2 1/2 hours. $30
 
Pulled Sugar Artistry
In this demonstration, James Foran, will show how to cook and color sugar for a small showpiece including roses, leaves and ribbons. James will also show how to caramelize sugar and make decorations for desserts including spun sugar, sugar cages, sticks, corkscrews and pulled praline. Adapting these techniques for home use and how to store sugar pieces will be discussed. 3 hours. $55 A sample is pictured on our web site.
 
Rolled Fondant Made Easy
Susan Carberry of The Cake Cottage, will use store bought fondant to show the basic techniques of rolling, covering and decorating a cake with fondant. Simple methods of creating bows, drapes, quilting, embossing and quick flowers including fondant ribbon roses will be shown. Valentine's Day and Easter ideas will be emphasized when Susan uses fondant to cover cookies and a mini individual wedding cake. Pricing guidelines discussed. 3 hours. $45
 
Roses
This class provides new materials for beginners, as well as a refresher for experienced decorators. Students need to bring tips #12, #104, a #7 rose nail, bags, and a cookie sheet. All icing will be supplied by the instructor. 2 hours. $20
 
Strictly Stringwork
Includes single, double, triple, interwoven, and multi-colored stringwork. Precise, even decorating will be emphasized. Frosting will be supplied by the instructor. 2 hours. $20
 
Super Soups
Caterer Lenice Lopez will show how to make tortilla soup, corn chowder, steak chili, and a light vegetable soup. Garnishing and attractive presentations will be featured. Adapting clear and cream bases to various soups will be emphasized. 3 hours. $40
 
Vegetable Flower Centerpieces
This class will include detailed instruction in designing, cutting, assembling, and arranging bouquets of vegetable orchids, calla lilies, apple blossoms, daisies, daffodils, wild roses, mums, pansies, dahlias, anthuriums, fantasy flowers, and much more, using radishes, red cabbage, turnips, scallions, carrots, baby corn, green peppers, broccoli, cauliflower, and squash. Each student will create more than a dozen different flowers to take home. Students need to bring a sharp paring knife (not serrated), a few radishes and green onions, two scraped carrots, scissors, and a plastic container for storing completed flowers. 2 hours. $30
 
Wedding Cake Workshop
In this two-part class, students will learn how to bake, frost, assemble, decorate, and transport a three-tier wedding cake. Detailed step-by-step instructions will be provided and demonstrated the first night; cakes baked at home will be assembled and decorated in class the second night.
